Cranberry Sauce w/ Wine, Orange, and Walnuts

Your standard cranberry sauce is, IMO, kind of repulsive -- about all you can taste is the sugar. This is better.

12oz package of cranberries
1 orange
1 cup red wine
1 cup sugar
1/2 cup chopped walnuts

  1. Using a potato peeler, peel most of the rind of the orange. Try to pick up as little of the white pith as feasible, but don't get anal about it.
  2. Chop the rind finely.
  3. Put the orange rind, cranberries, red wine, and sugar in a pot.
  4. Get it boiling and turn down to a simmer. Cook until the cranberries are soft and some have popped, about 15 minutes, then remove from the heat.
  5. Peel the orange and cut it into 1/4 inch dice, removing the seeds and as much pith as feasible.
  6. When the cranberries have cooled, mix in the diced orange and walnuts.

I advise making this the day before Thanksgiving and refrigerating until you eat, less to do on the day itself. But it's good as a side-dish at other times too, of course.

Put a little on the bird too...

Great recipe! I've done something similar, but without the wine or nuts, so will have to give that a whirl. OJ instead of wine is what I've done.

I also recommend putting about a 1/4 cup of the sauce on the bird during the last basting or two... It will crisp up on the outside and add a nice zip to the skin...


Serendipity

I wanted cranberries this year but didn't feel like the HFCS-filled version in a can. We got some fresh cranberries, but I lamented that most of the recipes were lots of sugar and a bit of cranberries. A nice bit of serendipity finding this recipe today. :)

I'm gonna have to try that one. My usual cranberry sauce recipe is:

12oz bag fresh or frozen cranberries
1 cup sugar
1 orange

  1. Stick the cranberries and sugar in a food processor.
  2. Add orange peel (either chopped as in your recipe or use a zester).
  3. Blend until cranberries are finely chopped (not pureed).
  4. Refrigerate overnight.
